Yes, the LBSDMX128035 uses high-density OFC spiral shielding (85%+ coverage) and a twisted-pair construction suitable for balanced DMX512 lighting control and line-level audio signals.
DMX512 runs on the RS-485 electrical layer. RS-485 is specified around a 120 Ω nominal characteristic impedance on shielded twisted-pair cable, and impedance comes from the construction — conductor spacing, insulation and shield geometry — not from the copper size alone.
LBS publishes 120 Ω on the double-shielded LBSDMX…-2 models. On this single-shielded model the published data sheet states shield type, braiding, jacket O.D. and temperature range, and does not state an impedance figure. If your project documentation has to carry one, request the value against this model instead of assuming it.

LBS builds two DMX512 families with the same two conductors, the same 6.3 mm matt EPVC jacket and the same -20 °C to +70 °C rating. The difference is the shield, and that is the line the purchase order has to be specific about.

Where the run shares a tray, a truss or a cable path with dimmer racks, LED power supplies or motor drives, the foil layer under the braid is the reason to specify the double-shielded construction. Where the data pair is routed clear of that equipment, the single-shielded spiral is the simpler build and the usual choice.

Not for the bus. DMX512 is specified as a 120 Ω shielded twisted pair, and Cat5e / Cat6 is specified at a nominal 100 Ω ±15 Ω. Those are different physical layers, so a network pair is not a substitute for this cable on a lighting run, however good that cable is for its own purpose.
Cat5e / Cat6 is the right cable in the other case: when the DMX universes travel as Ethernet traffic between a console and a node — Art-Net or sACN (ANSI E1.31) — and the node then outputs conventional DMX512 to the fixtures. The rule for a purchase list is that the cable follows the port: a 5-pin XLR DMX output takes DMX512 cable (this page), an RJ45 output takes network cable plus a node at the far end.
